
Poor me, I got hit with some kind of nasty bug. Good thing I know how to make soup! Soup makes everything better.
Here’s the simple recipe:
Ingredients
1 container veggie broth
1 garlic clove, minced
1/4 cup onion, diced
1/4 cup celery, chopped
2 medium carrots, sliced
1 medium tomato, chopped
1 can white beans, drained
1 tablespoon canola oil
1/2 cup favorite noodles. I used rings because I don’t feel well and rings make everything better.
Directions
Heat canola in a pot, and cook the onion and garlic until they change color. Often I’ll add a tablespoon of flour at this point to make a simple roux, but I skipped that step today because I planned to overcook the pasta to turn it into soft and almost mushy comfort food.
Then mix in the rest of the vegetables, the beans, and slowly add in the broth. Once the broth is boiling, add the noodles and cook until the noodles are how you like them.
I didn’t add any spices this time, just pepper, because I used Swanson’s, which is plenty salty enough, and I needed something soothing as opposed to exciting.
